Hi Marty;
    Where is this coming from?  I have restored several Honda 600 Sedans and Coupes and none have been 100 point cars or a condition 1.  A 100 point car is for all purposes new, all plastic is new, the rubber is new, all paint and chrome is new and this includes where you can't see it.  All bolts, nuts, screws, buttons, labels and even the shift knob is new.  When you remove the brake drum the hold down kit and shoes are new and the correct color.  A nicely appointed car looking new 3 feet away is still only a condition 2 and most likely a high 3 car.
I have shown Honda 600's in Concours graded shows and took best in class but even that car was only a condition 2 (Old Car News and Market Place price guide code) I did not have all the plastic changed out, the tubes to the master cylinder were not green as original and the Dash was original (30 years old) Very nice, but showing wear.  I drive it to and from shows and even on the occasional outing.  And I am attaching a picture of it.  If it was a 100 point car, then you are correct, it is no longer a car but a object of Art and should be displayed as such.
    But Marty, they are to much fun to leave in the show room, I drive mine when ever I can.  It keeps them alive.
Put some after market wheels on it and tweak in the carb and timing, and your set to have fun on the road.
