Can the clutch be changed without pulling the engine on a 71 Z600 coupe?

The easy part is removing the blower motor. The tough part is removing the exhaust system. I have always found the easiest spots to disconnect are where the header meets the cylinder head and at the collector after the heat exchanger. If you attempt to disconnect at the heat exchanger, you find all the bolts are very rusted and you end up destroying some gaskets which may be hard to replace. To access the bolts at the cylinder head, I remove the grille screen which is held in place by tabs which can be bent.

On a coupe and late sedan you don't even need to remove the heat
exchanger. Only remove the 3rd pipe back- the down pipe. There was
originally lock nuts on the 3 bolts holding on the 3rd pipe. If they
are missing you will know someone split your pipes before. Apply
penetrating oil, I like Kroil Brand, it comes in a small orange can.
Soak the bolts and remove them. If you break a bolt then you will
need to remove the heat exchanger.
Besides the 3 8mm bolts at the top it should have 2 at the bottom at
the bracket. If you are missing that bracket, you better find one as
you will crack your #3 pipe up inside the shrouding. Once you crack
it you will need to remove the shroud to weld it. If you live in a
warm state like Cali, you don't need that shroud.
Once that pipe is off, loosen and remove the clutch cable and get it
out of the way - just slide it under the cooling fan. Remove the 4
6x10 cover bolts and remove the cover. Under there you will see 8
6x10 bolts which you will remove. Place a 17mm wrench on the timing
pulley to rotate or hold the engine while you are removing the 8
bolts.
In the parts book the bolts are specified as 45mm long. This is
Absolutely Incorrect. Do not replace them with longer bolts. My
friend Andy in Las Vegas did and drove it to a Micro Car Meet. By the
time he got there all his oil was missing ! The 45mm bolts protruded
through the clutch drum and sliced through his primary cover causing
the oil loss. Ray Cave and Bruce D. also were there, it was amazing
Andy didn't hear the ruckus under his hood !
More clutch info if you need it, later, but now I must continue with
an engine rebuild.

The reason I am asking is that there are several issues that can cause your clutch to feel like it is going out and unless you address all of them then swapping out a pressure plate, drum and friction disk will do little to correct the problem.
Do the following trouble shooting points
look at the cable, where it attaches to the peddle and where it passes through the engine housing and if it is correctly attached to the clutch arm. If the cable is stretched then that may be all you have to do. If you remove the pressure plate look at the flat (look like thin leaf springs) which bolt to the pressure plate to it's bracket I have seen many that one of the two leafs are broken. Then look at the black finger diaphragm spring and see if it's broken. And, while everything is apart, look at the throw out bearing.
Miles brought up a good point too, there are different lengths of bolts going into the whole unit. Using a scrib to feel out the depth of the bolt hole will ensure you are using the correct length of bolt. And, for the sake of your engines threads, use a torque wrench. 6mm bolts should have a dab of lock tight and torqued 90 to 110 inch pounds. 90 seems to be all that is needed. Also, look at the threads on the bolts you remove to see if there are any stress cracks. Nothing like using the same bolt and breaking it off in the threads.
Last note, it's easier to pull the engine and do this than pulling all the parts. Besides then you can clean the engine compartment.
