How do you identify if a cam is a Hawaiian cam?
Are there some identifying marks or numbers you can look for?
Is there some noticably different shape to the lobes or something?

Look at page 4-1 of the Honda 600 Sedan Shop manual (click here
to see it on Steve's Honda 600 site). Under valve timing for the Honda 600 you will see mention of a 1969 and a 1970 version of the Honda 600 camshaft. I believe the 1969 specs refer to the Hawaiian cam. Notice the intake valves are open for a longer duration on the 1969 model.
If you have the tools and the patience, you could degree you cam. Or you could take a side view picture of a stock cam and compare it with any exotic cams you come across. If you take a picture, orient all the cams in the same direction (e.g. the TDC notch at the top of the image and horizontal).
