So how do you tell them apart without doing the whole dial indicator
thing?
I mean Honda had to have some sort of stamping on the cams, right?

The Hawaiian/Euro cams are pretty rare in the USA.
The coupe cam has a hole drilled in the end for the tach drive. The
sedan cam does not. You can use any cam in any 600 twin except if you
use the sedan cam in a coupe you won't have a tach.
Later years for replacement parts, Honda only supplied the coupe cams
and were sold to sedan owners. The extra hole did not affect the cam
or it's usage.
